I know lots of us weren’t much in the celebrating mood, but I do still think it’s important to make moments of joy for ourselves and continue to enjoy fun traditions with family and friends. So whatever you did this weekend whether it was BBQing or just staying home and recharging your mind and body, I hope it was great
Today I’m sharing the recipe for my Easy Pesto Chicken Pasta with Grape Tomatoes and Fresh Basil. I make this probably twice a month and it’s yummy warm and even right out of the fridge. This is a very forgiving dish, so use my measurements as a guideline, but you can totally add more pesto/tomatoes/basil etc. to your taste.

Easy Pesto Chicken Pasta with Grape Tomatoes and Fresh Basil
Servings: 4-6
Ingredients:
- 5 oz Jarred Pesto
- 1/2 cup Heavy Cream
- 5 oz Grape Tomatoes
- 3-4 Fresh Basil Leaves, chopped
- Half Small/Medium Yellow Onion, diced
- 2 tbs Honey
- 16 oz box Bowtie Pasta, I usually use just 3/4 of the box
- 1-1.5 lbs Chicken Breast, cubbed
- 1/4 cup Shredded Parmesan Cheese
- Salt and Pepper to taste
- Olive Oil
- Minced Garlic
Directions:
Bring a pot of water to a boil and cook the pasta.
I like to cube my chicken before adding it to the sauce pan, I find it makes it easier to cook and brown nicely this way. Add olive oil, minced garlic, chopped onion, salt, pepper and chicken to a large saucepan over medium-high. Once chicken is cooked thoroughly, drizzle in the honey, 1/2 of the pesto and toss in the grape tomatoes. Mix while allowing the chicken to brown and the grape tomatoes to soften.
Lower the heat to medium-low and add to the saucepan the cooked pasta, heavy cream, remainder of pesto and Parmesan cheese and continue to stir until throughly combined. Turn off heat. Add the fresh basil and give it a few more stirs. Then serve!
