Each year when Fall comes around, I get the baking bug. Both sweet and savory things, if it requires an oven I’m making it! My first bake of this season is Croissant Wrapped Asparagus with Prosciutto and Mascarpone. It was so easy to make and so delicious!
I was tempted to use goat cheese, since the cheese is known to go so well with both asparagus and prosciutto, but something told me to try out mascarpone for a softer (both in texture and flavor) taste and I’m so happy I did! It adds the perfect creaminess to the mix without overpowering any other element.
I’ve made these twice now, once served with steak the other time with chicken and both pairings were great! Just real hearty and comforting, as Fall baking should be!
Croissant Wrapped Asparagus with Prosciutto and Mascarpone
- 1 can of mini crescent croissants
- 1 bundle of asparagus
- Everything Bagel Seasoning (I get it from Trader Joe’s)
- 4 TBS mascarpone cheese
- 4 slices of prosciutto
Preheat oven to 400 degrees.
Prepare a cookie sheet by greasing it or placing aluminum foil on it.
Cut the bottoms of the asparagus. Roll out the crescent rolls. You’re going to use 2 per serving, so separate accordingly. Smear 1 TBS of mascarpone cheese on the pastries. Then grab a handful of asparagus stems and wrap them in the center with a slice prosciutto. Now place the those bundles in the pastries and fold them up, enclosing the prosciutto-wrapped asparagus. Give the pastry ends a little pinch to keep it closed. Sprinkle the Everything Bagel Seasoning on top.
Place cookie sheet in the oven and bake for 30 minutes or until pastry is browned.
