I’m excited to share with you another delicious recipe I made with my favorite Walmart brands! Chili is one of my favorite weeknight meals. I love it’s ease, heartiness and that it’s a great to freeze leftovers and stash them to thaw for a quick meal another day. To embrace the Falls season and I incorporated into this chili zucchini and butternut squash, and wow does is kick the meal up a notch!
Before I share my butternut squash & zucchini chili recipe I want to talk about 2 of my favorite Walmart brands that are the stars in this recipe: Marketside and Great Value. Walmart’s Marketside is always my #1 choice when buying ground beef, because of the quality and the lean/fat ratio options which I love to have since I like to switch between the ratios depending on what I’m cooking. As for all of the canned goods, frozen fruits/vegetables and seasonings I use on a daily basis, I love Walmart’s Great Value brand.
There really is no greater feeling while grocery shopping than when you see that your first choice is the one that offers tons of savings too!
This meal that serves 8 costs $21.15 to make (not including the spices you already have in the pantry) which comes out to $2.64 a person!
Now onto the chili. The zucchini and butternut squash not only bring a pretty pop of color to the dish, but also a nod to the season. The butternut squash in particular adds a lovely bit of sweetness that pairs so well with the chili flavors. And did I mention it made in the slow cooker? Making it as easy as it is delicious!
Butternut Squash & Zucchini Chili Recipe
Servings: approximately 8
- 2 bags Great Value frozen butternut squash
- 1 can Great Value great northern beans
- 1 zucchinni
- 1/2 large sweet onion, chopped
- 2 cups Great Value vegetable broth
- 1 8z can Great Value tomato sauce
- 2 1lb packages of Marketside organic grass-feed ground beef
- 2 TBS Great Value garlic salt
- 1 TBS chili powder
- 1TBS paprika
- 1/2 TBS cumin
- 1 tsp black pepper
Combine ground beef, broth, onion, tomato sauce and seasonings in a slow cooker and set on high for 4 hours. When there is 1 hour left on the timer, add the bean, butternut squash and zucchini. Once the slow cooker is done, serve chili alone or some garnish options would be: shredded cheese, a dollop of sour cream, or avocado (my favorite option). You can also pair the chili with rice which will stretch out the servings, giving you even more from this recipe!
